Spring Ling Cod

Here’s a lighter smoked fish recipe for when you don't have all day. Almost the flavor of a cold smoke, even. We had a beautiful ling cod available off the dock, but any fresh white fish can be substituted out to similar result.


  • 2 Lbs Fresh Ling Cod fillets
  • 1/2 C olive oil
  • 1 lemon
  • 3 fresh garlic cloves minced
  • 1 tsp fresh thyme
  • 1 tsp fresh dill
  • 5-10 leaves fresh basil for garnish
  • 1 tsp sea salt
  • 1 tsp fresh ground black pepper
  • 5-10 mini sweet bell peppers
  • 1 whole leek
  • 2 small yellow squash
  • 8 oz cherry tomatoes
  • 4 oz Kalamata olives


  1. Slather fish in olive oil, garlic, juice of 1/2 lemon plus zest, salt & pepper, herbs, and place on oven safe baking dish.
  2. Slice remaining 1/2 lemon into three rounds and arrange atop fish fillet
  3. Slice all veggies into thin strips, toss together and pour over fillet
  4. Smoke at 350F for 35mins
  5. Garnish with julienned fresh basil to serve
