Ingredients
- 2 Lbs Fresh Ling Cod fillets
- 1/2 C olive oil
- 1 lemon
- 3 fresh garlic cloves minced
- 1 tsp fresh thyme
- 1 tsp fresh dill
- 5-10 leaves fresh basil for garnish
- 1 tsp sea salt
- 1 tsp fresh ground black pepper
- 5-10 mini sweet bell peppers
- 1 whole leek
- 2 small yellow squash
- 8 oz cherry tomatoes
- 4 oz Kalamata olives
Preparation
- Slather fish in olive oil, garlic, juice of 1/2 lemon plus zest, salt & pepper, herbs, and place on oven safe baking dish.
- Slice remaining 1/2 lemon into three rounds and arrange atop fish fillet
- Slice all veggies into thin strips, toss together and pour over fillet
- Smoke at 350F for 35mins
- Garnish with julienned fresh basil to serve
