Ingredients
- 1 1/2 pounds baby rainbow carrots, rinsed and scrubbed clean
- 2 Tablespoons olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
Preparation
- Heat Memphis Grill to 450° with the solid insert in place and the hood closed.
- Toss carrots with remaining ingredients in 9x13-inch aluminum pan.
- When the grill is ready, open and roast the carrots 15-20 minutes under tender.
