Simple Roasted Heirloom Carrots

Colorful and nutritious, these heirloom carrots are great for roasting because they’re crisp and beautiful! Simply season, set on the grill and enjoy!


  • 1 1/2 pounds baby rainbow carrots, rinsed and scrubbed clean 
  • 2 Tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper


  1. Heat Memphis Grill to 450° with the solid insert in place and the hood closed.
  2. Toss carrots with remaining ingredients in 9x13-inch aluminum pan.
  3. When the grill is ready, open and roast the carrots 15-20 minutes under tender.
