Grilled Cedar Plank Asparagus

Asparagus kissed with the taste of smoked cedar, fresh lemon, and draped in creamy Manchego cheese. This dish makes for its own happy appetizer or as a quick side to any fish grilling. A great way to brighten up any grilled dish is to adding grated lemon. We keep a whole lemon in the freezer at all times to liven up our favorite grill recipes. Then simply grate or shave slices into anything you think might like it.

Ingredients

  • 1 pound asparagus
  • 1 lemon frozen solid for grating
  • 1 fresh lemon, thinly sliced
  • 3 T meyer lemon-infused olive oil
  • 1/2 t course ground black pepper
  • 1/2 t ground white pepper
  • pinch of fennel seeds

Preparation

  1. Soak cedar plank one hour
  2. Snap off fibrous ends of asparagus
  3. Toss with meyer lemon olive oil, black pepper, white pepper and fennel seeds, drape with fine lemon slices
  4. Grill on cedar plank over open flame medium heat for 25-30 minutes or until asparagus is tender
  5. Shave Manchego cheese over the hot spears and grate/zest about 1 T frozen lemon over the top
