Chocolate Brownie S’mores

From Steven Raichlen’s Project Smoke, we present the most delicious dessert we’ve had in a very long time. This isn’t your standard s’more—In fact, this is the richest, most decadently chocolatey s’more of all, plus it’s smoke-roasted and served on a cedar plank for a delicious smoky finish and spectacular presentation. For this recipe, we used locally-made artisan vanilla flavored marshmallows, but you can use any type of marshmallows you’d like. Feel free to experiment with flavors of brownies, marshmallows, liqueur, and chocolate for an unlimited amount of ooey, gooey dessert combinations.

Ingredients

  • 4 chocolate brownies
  • 4 fresh mint leaves, rolled and thinly slivered
  • 2 tablespoons menthe liqueur or favorite liqueur (optional)
  • 4 squares of premium chocolate bar
  • 4 large marshmallows or 8 small marshmallows

Preparation

  1. Set your grill to 450°F
  2. Place your brownies onto cedar planks and assemble them with the following steps:
  3. Prick the top of the brownies with the tip of a knife
  4. Sprinkle liqueur onto brownies (optional)
  5. Sprinkle fresh slivered mint atop brownies
  6. Lay a square of chocolate on top of the brownie and top with a marshmallow (or two, depending on which size you’re using)
  7. Place planks with brownies onto grill and close the lid. Cook for 4-6 minutes until the marshmallows are sizzling and toasted to your preference.
  8. Transfer to plates or bowls and serve with mint garnish or sprinkled with coarse ground salt if you’d like.
