Smoked Chicken Thighs Wrapped In Bacon

Using only three ingredients, this recipe for chicken thighs is ready for the smoker in a matter of minutes. Wrapping the thighs in bacon ensures a moist and tender result. We suggest you use a tomato based sauce when prepping your chicken thighs and have only this word of caution for you. Many commercial BBQ sauces include liquid smoke or some other artificially based “smoke” flavor. Try to avoid using these. You will get all the wonderful smoky flavor you need during the 2 ½ hours it takes to smoke these bacon wrapped beauties in your Memphis Grill. We recommend using apple or hickory wood pellets for this recipe.

Ingredients

  • 8 chicken thighs
  • 16 strips of bacon
  • 1 C of your favorite tomato based BBQ sauce

Preparation

  1. Set Intelligent Temperature Control (ITC) to 225 degrees F.
  2. Prepare the chicken thighs while your Memphis Grill is heating up. Remove the skin from the thighs and trim off the excess fat.
  3. Coat the chicken pieces with BBQ sauce using ½ Tbsp of sauce on each side of the thigh
  4. Tuck the side flaps of the thigh underneath and wrap the whole thigh by winding two slices of bacon around it until you’ve created a nice tight bundle. Repeat with the rest of the thighs.
  5. Coat the top of each thigh bundle using one more Tbsp of BBQ sauce per chicken thigh.
  6. Place thigh bundles on the heated grill, close the lid and smoke for 2 – 2 ½ hours depending on the size of your chicken thighs.
  7. The chicken is done when it reaches an internal temperature of 170 degrees.
