Quesabirria Tacos

  • · 6 Guajillo chile peppers
  • · 3 Ancho chile pepper
  • · 3 Chile de arbol peppers
  • · 3 Tbsp Extra Virgin Olive oil, divided
  • · 2 lbs goat stew meat, cut into 1-inch cubes
  • · 1 large White onion
  • · 7 cloves Garlic, minced
  • · ¼ cup distilled white vinegar
  • · 4 cups Beef broth
  • · 14 oz Diced tomatoes, canned
  • · 2 Tbsp Mexican oregano
  • · 2 tsp ground thyme
  • · 2 tsp Salt
  • · Flour tortillas
  • · Oaxaca cheese, grated
  • · 1 lime, cut into wedges
  • · Fresh cilantro, to garnisg
