- 2 ½ pounds turkey breast, cubed
- ½ tsp pepper

- ¼ C brandy
- 2 Tbsp olive oil
- 2 Tbsp brown sugar
- 1 Tbsp lime juice
- 1 Tbsp garlic, minced
- 1 tsp ginger root, minced
- 1 tsp salt
- Salsa Ingredients list
- 1 Tbsp olive oil
- ¼ C onion, finely minced
- 20 ounce can crushed pineapple, drained
- ½ C cilantro, chopped
- ¼ C sugar
- ¼ tsp salt
- ¼ C brandy
Preparation
- Place turkey in a heavy-duty closeable baggie with marinade.
- Marinate for 3-24 hours.
- To make the salsa, sauté olive oil and minced onions 1-2 minutes.
- Add pineapple, sugar and salt to onion mixture and boil for 2 minutes.
- Add brandy and boil for an additional 30 seconds, then remove from heat. Save until needed.
- Put turkey cubes on skewers and grill 5 minutes per side on a medium heat.
- Spoon salsa over kebabs and enjoy!
