Savory Cedar Plank Salmon

  Ingredient: Specification: Amount:    
  Salmon Filet   6 oz    
  Fish rub   1 TBL    
  Vegetable oil   1.5 tsp    
  Cedar Plank 4x6 1 each    
  Lemon wedge 1 each    
  Citrus Butter softned 1 TBL    
  1. Soak cedar plank in water overnight.      
  2. Drizzle oil over salmon and gently rub in fish rub.    
  3. Place in refrigerator uncovered for four hours.    
  4. Heat grill to 400 degrees.      
  5. Place Salmon in center of cedar plank.      
  6. Place plank in center of grill and cook until  internal temp reaches 130 degrees.
  7. Remove from grill and brush with citrus butter.    
  8. Serve with lemon wedge and grilled asparagus.    
  Fish Rub        
  Ingredient: Specification: Amount:    
  Brown Sugar   3 TBL    
  Sage-dried   1 tsp    
  Kosher Salt   1 TBL    
  Thyme-dried   1 tsp    
  Black pepper fine grind 1 tsp    
  Lemon Pepper   1 tsp    
  1. Combine all ingredients in mixing bowl and toss to combine.  
  2. Place in airtight container and hold until needed.    
  Citrus Butter      
  Ingredient: Specification: Amount:    
  Butter-salted softened 8 oz    
  Lemon zest minced 1 TBL    
  Lime zest minced 1 TBL    
  Orange zest minced 1 tsp    
  Lemon juice   1 oz    
  Lime juice   .5 oz    
  1.Place all ingedients in kitchen aid with paddle attatchment.  
  2. Mix on medium until ingredients are incorporated.    
  3. Cover and refrigerate until needed.
