Cast Iron Skillets
You can’t go wrong giving the BBQ lover on your list a cast iron frying pan. They come in a variety of sizes and can handle all of your menu ideas with ease. You can use a cast iron frying pan to cook up everything from pineapple upside down cake to braised meat dishes. And don’t forget cast iron works wonders with your favorite cornbread recipe. We like cast iron because it absorbs heat and then distributes it evenly for perfect searing and even baking.
Cast Iron Grill Pan
A cast iron grill pan is ideal for cooking smaller items that may fall easily through the grate of your grill such as shrimp, scallops, vegetables, polenta cakes and smaller hors d’oeuvres. Simply pre-heat the pan when you are pre-heating the grill and when the pan is good and hot you are ready to get cooking! Many grill pans are dual purposed having one side ridged and the other flat. When heated to a higher temperature the ridged side sears food perfectly, leaving authentic grill marks. When flipped over to the flat side the pan can be used to cook items such as pancakes and fried eggs. Add one or two cast-iron grill pans to your outdoor kitchen arsenal and enjoy a full breakfast made on the Memphis pellet grill.
Cast Iron Pot (with lid)
We used this cast iron pot with its lid on to bake the beautiful round loaf of crusty boule bread pictured above. The recipe for this no-knead bread can be found here. Cast iron pots and casseroles are available in a variety of different shapes, sizes and price points. They are a great addition to your outdoor cookware supplies, especially for use when the temperature is low on the Memphis. We use a similar cast iron pot when making Old Fashioned Baked Beans. The cast iron can handle the smoke that is present inside the pellet grill when the Memphis is set at a low temperature for a long and slow bake!
A pizza stone is a must for all pizza lovers! We used a pizza stone to make our Memphis Wood Fire BBQ Pizza and couldn’t be happier with the end result. The stone absorbs the heat from the BBQ and then releases it evenly during the baking process. When cooked in a conventional pizza pan, moisture gets trapped beneath the pizza and results in a crust that can be damp and soggy. The pizza stone provides the dry heat needed for a crust that is perfectly cooked… every time.
We find perforated pans useful when we are smoking smaller items on the Memphis. The holes in the bottom of these pans allow the smoke to get to the underside of the item being smoked. As well the perforated pizza pans shown are a less expensive alternative to the pizza stone. We used this type of pan when baking the Smoked Chicken, Caramelized Onion and Artichoke Pizza shown in the picture. The pans proved to be a perfect choice!

Intelligent Temperature Control Meat Probe
This restaurant-grade food probe works in tandem with the Intelligent Temperature Control system on The Memphis pellet grill to measure the internal temperature of whatever you’re cooking. Once the food reaches the desired temperature, the ITC meat probe automatically reduces the grill temperature to warm (the lowest setpoint).
