Week Three: Philly Cheese Steak Sandwich

Today we are celebrating the sandwich everyone associates with Philadelphia: the delicious and highly prized Philly Cheese Steak Sandwich. Now the cheese choice for this sandwich seems to be the subject of much debate. Today we’ve gone with provolone, but melted pepper jack can also be absolutely amazing. We are fans of spreading homemade smoked garlic aioli on the bun, then lining it with thinly sliced provolone. Less debated but equally important is the cut of beef selected for this tasty sandwich. Today we’ve gone for a steak we know will never disappoint, a nicely marbled and seasoned rib eye.

Week Five: Green Bay Beer Brat

Today we’re bringing out one of Wisconsin’s most famous dishes; the Beer Brat. This recipe combines the hoppy and aromatic flavors of beer with the char of a grill. We here at Memphis really like this recipe off our grill because of the unmatched wood fire flavor it brings.

Week Seven: Minnesotan Juicy Lucy

The Juicy Lucy is standard fare on many restaurant menus in Minneapolis. Anyone who loves the classic hamburger with cheese will quickly become a fan. Credit for this culinary delight goes to both Matt’s Bar and the 5- 8 Club in Minneapolis. Both establishments claim responsibility for the Juicy Lucy so in the interest of fair play we will give both kitchens a solid thumbs up. What makes this hamburger different from the traditional cheeseburger is the location of the cheese. Instead of placing the cheese on top of the patty the cheese is put inside the meat before cooking resulting in exceptional taste.

Week Nine: New England Smoked Clam Chowder

When it comes to matching foods with places clam chowder and New England are inseparable. For the purpose of this recipe, we will change it up with a Memphis twist. Before adding the clams to the soup, place them in the Memphis for a short smoke. We are confident the smoky flavor will score big points with the fans.

Week Eleven: Atlanta Mac and Cheese

Today we present to you the ultimate comfort food that always delivers. Macaroni and cheese has enjoyed a huge following in the states as far back as Thomas Jefferson, and today the dish is so important to fans in Atlanta that the city hosts its very own yearly Mac and Cheese festival! The dish has its variations, but essential ingredients include pasta, cheese, and a bit more cheese for good measure. Easy to make Mac and Cheese stands alone as the quintessential football side dish. At home, cooked on the Memphis Pellet Grill, this meal with all its rich, gooey goodness serves beautifully in a bowl. All you need is a big spoon.

Week Thirteen: Tampa Bay’s Cuban Sandwich

As the name implies, the Cuban sandwich has its origins on the island of Cuba. The introduction of the “Cubano” sandwich in Florida likely occurred in the late 1800’s. Due to the proximity between Cuba and the Florida communities of Key West and Tampa travel between countries was common during this timeframe. Cuban workers seeking and finding work brought their favorite sandwich recipe with them. It didn’t take long before this tasty sandwich squeezed out the competition in local restaurants and cafes making it a popular choice for all Florida residents. In fact, the Cuban sandwich is now so popular that in 2012 the city council in Tampa proclaimed the Cubano the city’s “signature” sandwich.

Week Fifteen: Dallas Style Beef Brisket

Cooking a great beef brisket is a great point of pride for barbecuers all over, and especially for Dallas Cowboys fans! Today we present an amazingly tender and delightfully smokey beef brisket that’s perfect for your Sunday football party, or a few days worth of delicious leftovers. If this doesn’t make your mouth water, we don’t know what will!

Week Seventeen: Tennessee Cornbread

For this coming winter it will be hard to find a more comforting treat that buttermilk cornbread cooked on your wood fire grill. This cornbread recipe is perfect because it goes great with most meals, and it’s easy to get ready for gameday.
