For those of us who prefer long days, warm sunshine, and serious beach time, the arrival of autumn marks a significant change. While the transition from summer to winter can quickly put an end to enjoying the sand and waves, there are other delights waiting in the wings!

The fall season heralds the beginning of the garden’s harvest. A long warm summer has helped nurture our gardening efforts, and now gardens across the country are yielding an amazing bounty of slower growing foods that are perfect in the fall season. And if you haven’t been sporting a green thumb, there’s always the local farmer’s market. Right now tables are overflowing, and bins are filled to the rim with produce and baked goods providing a feast of color and countless options for Saturday morning shoppers.

1. Roasted Root Vegetables

We love roasting root veggies on the Memphis Wood Fire Pellet Grill. This cooking method deepens the flavors and brings out the natural sweetness of most root vegetables. They are the perfect accompaniment to a beef or pork roast and are beautiful beside Smoked Pork Chops.

In this recipe we’ve chosen to roast carrots, parsnips, sweet potato and baby red potatoes but feel free to experiment. You can make use of other vegetables too. Even some from above ground! Beet root, Brussel sprouts and cooking onions also roast up nicely.

2. Grilled Veggies

Grilled vegetables make a superb salad. The light charring adds an extra layer of flavor to these delicious veggies while the balsamic vinaigrette imparts a bright note and tang required to counterbalance the sweetness of the fire roasted vegetables.

You can serve this veggie salad warm, right off the grill, or at room temperature. Sprinkle some soft goat cheese over the top of the dressed salad for a tasty lunch, or offer the salad beside a perfectly grilled steak.

3. Baked Autumn Acorn Squash

Searching for squash beneath large green leaves in the garden is like going on a treasure hunt. There are many different varieties of this hearty vegetable, each with its own unique flavor. We love the texture and sweetness of an acorn squash baked in the Memphis, dripping with a brown sugar, butter, and maple syrup filling.

Quickly prepared, this recipe will tempt even the pickiest of eaters in your household.

4. Halloween Bread Fingers

You won’t find the ingredients for our last featured recipe growing in your garden or at the farmer’s market, but when crisp autumn air heralds the end of October we know it’s time to add some pellets to the Memphis and make up a batch of this scary bread!
