Ultimate Philly Cheese Steak

1. Clean and slice vegetables and place ingredients in large cast iron skillet. Set on the Memphis to smoke for 30 minutes before turning up the heat.

2. Cut a large pocket into the side of the sirloin.

3. Alternate stuffing the Provolone cheese and garlic in the pocket.

4. Sprinkle generously with Memphis Steak Seasoning and rub into the meat.

5. Place on the Memphis Grill for 30 minutes at 180 degrees F. We recommend oak flavored pellets.

6. Remove the sirloin from the grill, adjust the ITC (Intelligent Temperature Control) to 350 degrees F and continue to cook your sides for another half hour.

7. Remove the sides, and adjust ITC to 450 degrees F.

8. Place sirloin back on grill and cook until the meat reaches an internal temp around 130–140 degrees F or approximately 8-10 minutes. Remove from grill. The sirloin internal temperature will continue to rise about 10 degrees after removing from heat.

9. Let rest briefly, slice, add sides and enjoy!
1, 2 inch thick sirloin steak
6 slices Provolone cheese
¼ C minced garlic
2 C peeled garlic cloves
2 C assorted peppers, sliced
1 C mushrooms
1 onion, thinly sliced
¼ lb. bacon, cut strips in half
